I don’t know about you guys but this time of year just has me running around like a mad woman. Between working, school for the kids, other commitments, and then getting ready for the holidays, I am all over the place. And then at the end of the day, I want some yummy comfort food, but have no time to do a bunch of cooking.
Meal prepping has really helped me make some easy dinners, but I find myself getting lost searching for recipe after recipe, so I wanted to help fellow busy moms out and create a list of 20 Easy Dinners…well it just so happens I found 20 Slow Cooker Recipes that save me time and are super yummy!
These Slow Cooker Recipes Make Easy Dinners for Busy Families
1. Creamy Tuscan Garlic Chicken
I love chicken. But I don’t always have time to cook up chicken on the stove top so anything that lets me have an easy dinner with delicious chicken made in the slow cooker is a win. My entire family loves this recipe!
2. Shrimp Scampi
My husband is a big fan of Shrimp Scampi. I am a big fan of easy dinners. This recipe makes us both extremely happy.
3. Meatball Chili
My kids would never eat chili. I couldn’t figure out a way to get them to eat it. Add some meatballs and suddenly chili is their favorite food. Who knew? (Kind of like how I can get them to eat any meat if I let them dip it in Chick Fil A sauce.)
4. Beef and Potatoes Au Gratin
Just YUM! That is all I can say about this dinner. And this is one of those meals that people think you spent a lot of time on. It is seriously simple, but oh so delicious.
5. Chicken Pot Pie
I think this is one of the most iconic comfort foods and is perfect for fall or winter. This chicken pot pie is as simple as it is delicious.
6. Mexican Pork Carnitas
Any time I can make some Mexican inspired food, my husband is a fan. My kids don’t really care for this one too much, but I think they are warming up to it.
7. Hawaiian Chicken Tacos
Want to change up your Taco Tuesday? This is a great option. It is an easy dinner, but super delicious and even the kids are huge fans.
8. Asian Pot Roast
I love this recipe. I make it a lot for a Sunday dinner. Easy dinners are a must for me on Sundays, but I still like something that feels like “Sunday dinner.” (Does that make sense?) And this dinner hit the spot.
9. Glazed Ham
I don’t think I even have to explain this one. Delicious, easy dinner, and perfect not only for any dinner, but could also be your Christmas dinner.
10. Honey Garlic Chicken
I mentioned I love chicken right? This is probably my favorite recipe on the list. Just trust me on this one okay.
11. BBQ Chicken
Coca-Cola BBQ Chicken is not just for summer. This yummy recipe is great for football parties and is really an easy dinner or party food to make.
12. Beef with Pea Pods
My husband thinks I put a lot of effort into this meal when I make it. Don’t tell him my secret about how easy it is. I even play it up by rarely making it, and when he asks if we can have it, I am all “I suppose I have time to make that…”
Little tip, it is all about the plating. Make it look fancy and they will think you slaved all over the stove.
13. Creamy Chicken Tortilla Soup
This yummy and delcious soup is perfect for these chilly days and cold nights. It is an easy dinner that will warm you right up.

Yum! You will love it.
16. Chicken and Dumplings
Another must-have comfort food. I always thought these were so hard to make. NOPE! This is a super simple dinner with this recipe.

I love this creamy white chicken chili because well…chicken. LOL (I told you I love chicken.) This recipe has won me some awards at a few chili cook offs.
18. Italian Meatball Soup
Another one my kids will eat simply because they love meatballs. Kids are so funny like that. You will love this italian soup.
