Mornings around here are hectic. Mike has to be at work early (like 5 am early) and then I have a six year old who would rather play than eat or get ready for school, and the twins… Slowest. Eaters. Ever. I am constantly moving in the morning, so getting a breakfast, especially a hot and somewhat healthy one, is nearly impossible. But I have a recipe that has helped a ton with this and my entire family loves it! Easy carb free breakfast wraps that are perfect for on the go.

Yep, just eggs. I love to use the happy egg co. eggs for this recipe because I know they are Free Range on Pasture eggs (also available in organic) and are hormone free. A big plus for me. I also love knowing that my eggs are from a company that is setting the gold standard for hen welfare. I happened upon this idea sort of by accident. I was preparing to make scrambled eggs with cut up ham bits and cheese mixed in. I poured the eggs in my hot skillet and suddenly a child needed me. I came back quickly but the eggs were already mostly cooked. So I came up with this for an easy on the go option. It has since become a family favorite.
How to make Easy Carb Free Breakfast Wraps
Preheat a skillet (I use a 12 inch but a 10 inch would work as well) on medium
Melt some butter in the skillet
In a small bowl beat 2-3 eggs (2 for a thinner wrap, 3 for a thicker one)
Pour the eggs into the hot skillet and cook for 45 – 60 seconds
Flip the eggs over and cook on the other side until done
Remove from skillet (You should now have an egg “tortilla”)
Fill with your choice of meats, or other fillings.
Fold two opposite sides of the egg “tortilla” in, then fold the remaining sides in, creating a wrap.
That is it! YUM!
