Years ago I put out a call to my friends for the banana bread recipes. One of my best friends in high school’s mom sent me one for peanut butter banana bread that was good. Over the years we have changed up the recipe, trying all different ingredients and amounts, and now, 8 years later, we have a recipe that we swear by.
This bread is always a hit when we give it to neighbors, fellow church members, and co-workers and we get asked for our recipe almost every time. It is super easy to make, and very kid friendly. It would even be great for a preschool snack (barring any peanut allergies), learn to bake activity, or for homeschooling when teaching kids about measurements. The Goof LOVES helping to mash up the banana and put in the ingredients.
TIP: If your bananas are not over ripe enough, you can still make this peanut butter banana bread. Simply place your bananas on a cookie sheet in the oven while it preheats. When the oven is heated, your bananas should be good to go.
This recipe can make 1-2 loafs depending on pan size and how full you fill the pans. I usually end up with one nice big 5 1/2 by 9 inch loaf, and one that is filled about 3/4 way (and so it needs to be removed from the oven about 15 minutes sooner). Best part of this recipe- you can add any extras you want. We have added nuts in the past, chocolate chips, even M&Ms. Have fun with it.
